Dr William Davis has gotten pretty famous for his book, Super Gut, and especially for his SIBO yogurt recipe (mainly culturing L. reuteri, L. gasseri, and B. subtilis so that you can mega-dose them). You can check his video and the comments to see how the yogurt helps people with every aspect of health.
The main side effect from mega-dosing these bacteria is itching, because they produce histamine. If you don’t have histamine-processing bacteria sufficient in your gut to handle that histamine, of course. Dr. Davis thus suggests taking lower doses of the ferment to start with, or activated charcoal to absorb the histamine (only once/if you do itch). I personally am one of the people who got itchy from these bacteria, but the activated charcoal really does work for that (I use 1tsp), and after a few days now I seem to be immune (I guess my histamine-processing bacteria colonized).
My SIBO Ferment 3.0
I have created my own version of his ferment, without dairy, to avoid spoilage when mailing it, and for those who are dairy-sensitive. I make it from:
Fermented red cabbage, celery & turmeric juice, and organic raw honey (all of which are extremely healing for the gut). I ferment this with the following bacteria strains: Biogaia protectis L reuteri, B subtilis, B coagulans, L gasseri, L fermentum, L rhamnosus, B. infantis, B longum, Akkermansia (ferment then boil akkermansia for max gut mucosa benefits), each one fermenting in its own jar and then combined after.
And for each ferment, use 2-10 billion CFU of the bacteria to start (or just a spoonful of past ferment of that strain). I also now (as of November 12) add a splash of ozonated charcoal water (holy water) to prevent mold.
Start dosing with just 1 teaspoon of the juice. Many people will get itching from the L. reuteri as it produces a lot of histamine (which is good for health if you aren’t sensitive to it). If you start itching, just drink 1-2g of activated charcoal. If you have a rare bad reaction to the juice when eating it, try just sniffing (NOT snorting) it instead. Even touching it is nice.

A Simpler and Possibly Nicer Ferment?
I also noticed that fermenting raw beet juice in some salt and vinegar, without adding any bacteria to it, worked really well for me, and didn’t cause any histamine itching. There’s no science to this, because the bacteria will depend on the soil the beets grew in, but it’s worth a shot since it’s simple. Make sure to use organic beets.
